Brownies with Potatoes? A New Favorite!



I always love adding a twist to every meal I serve to my family. This pandemic taught me to maximize whatever is in our pantry. This also made me exert a little “extra” effort in terms of creativity, since my family misses going out and dining in a cafe or a restaurant. 

Who does not love sweet and soft brownies to end a lovely dinner? And how about adding potatoes into it? Fascinated?

This whole read is all about how I made everybody’s favorite brownies using potatoes. Yes, potatoes! I am excited to share with you the whole experience so you can also create your version in the comfort of your home.


Potatoes Everywhere

Being a mom means evolving from breastfeeding to the introduction of solid foods to your child. One of the most popular baby foods moms always recommend is the potato. Be it boiled, stewed, roasted, or mashed! It is undeniably one of the easiest baby foods to prepare.

Did you know that the potato is “fat-free, sodium-free and cholesterol-free”? It is also packed with vitamins, antioxidants, and minerals like vitamin C, potassium, protein, and fiber. This nutrient-dense vegetable is a wonderful addition to our diet and a good substitute for rice to help with weight management. Creating dishes with vegetables, especially for kids, may be tricky, but potatoes are just so versatile that you can add it to just about any meal. What makes them more appealing is that they are affordable and readily available in markets everywhere. 

Potatoes are an excellent extender for dishes like Caldereta, Menudo, and Afritada. Don’t forget other yummy snacks made from spuds like spiral fries, flavored potato sticks, mojos, and even balls!


No Trick, Just Potato Treats

There’s more to potatoes than just savory treats. You can actually make delicious desserts like brownies, smoothie, doughnuts, croissants, or even brioche, using the humble potato.

I have recently discovered U.S. dehydrated potatoes, and how adding it to your recipe improves the overall flavor and texture of your sweet and savory dishes.

What are dehydrated potatoes? Simply put, they are real potatoes with just the water removed. They deliver all the flavor, nutrition, and versatility of potatoes in a more convenient package – and are the perfect ingredient for everything from soups and salads to main dishes and desserts. 

One of the recipes I tried using dehy potato is Chef Miko Aspiras’ brownies. My version is covered with melted chocolate making it extra mouth-watering!

It’s quite simple to make. Check the full recipe below.


Choco-Bathe Fudge Brownie

Ingredients

30 Grams U.S. Dehydrated Standard Potato Granules
80 grams of Cocoa Powder
350 grams White Sugar
4 grams Iodized Salt
2 grams Baking Powder
5 grams Espresso Powder
150 grams Whole Eggs
227 grams Butter. Melted
60 ml Oil
10 ml Vanilla Extract
88 grams Dark Chocolate Chip (optional)
1 cup melted chocolate


Procedure:

1. Preheat oven to 175 degrees Celsius.

2. Prepare your desired cake molder, cake ring with foil or you can just have a cake/brownies foil containers. Spray canola oil non-stick spray or you can lightly brush butter or oil on the cake pan.

3. Sift together the dry ingredients (except the sugar) including the U.S. Dehydrated Standard Potato Granules.

4. Mix into a big metal bowl the eggs, vanilla extract, butter, oil, white sugar until fluffy, fold in the dry ingredients.

5. Add the chocolate chips (or nuts), if available.

6. Pour your mixture into the cake pans or cake ring, bake for 30-45 mins depending on the depth of your pan.

7. Cool down, remove it from the pan or the cake ring.

8. Slice it into cubes or triangles.

9. Pour the melted chocolate.

10. Serve with a well-brewed coffee or hot milk.

It may sound cliche and repetitive, but isn’t it amazing that you can make such a delightful dessert with potatoes? My family loves the brownies, and they were devoured in minutes!

2020 Beginner's Pack! Excess of 2019 Materials!


Are you searching for the best planner for you, mom? Sticking with the budget? You got to finish reading everything here!


"Before discovering the word "planner," I've been a fan of "Scrapbooking." It all started from my late high school days when I learn to reuse previous projects to complete another one. Living below the average salary, my mom has no extra funds to support my materials like stickers, stamps, washi tapes and etc. But as a child who really wants to push a successful compilation of colorful pages, I decided to reuse and recycle my sisters' excess materials and old projects found in our cabinets."



As a millennial mom, nothing new with waking up seeing a bunch of planner moms on my Facebook or Instagram newsfeed. Even my Pinterest feeds show lots of it! I have tried a dated planner, but it never worked. (for me? lol!) I tried checking some planners from popular coffee shops, I even got two for free, but I end up giving them to my friends!

As I go back to my cabinet, piles of loose Kraft papers, washi tapes bought from the "mine all you can" thread of a planner group, stamps I purchased last year, and the pens gifted to me last Christmas. I realized that it can be my "dream" planner.

There are nothing wrong with buying expensive planners and some craft pieces, but if you can just save that cash for other things that are on top of the priority list, you can still create the best planner for you by doing it yourself or what they call "DIY."

Should we need a bunch of washi tapes?
Should we use expensive pens?
How about stickers? Is it really needed?

This first part of the "Junk Journal's for Mom's " will give you a checklist of the best tips, cheap materials, and nearest stores that you will be amused how affordable their prices are!

THE MAIN PAGES: Materials and Papers(Leaves)


  • Kraft Papers can be bought from 50 pesos to 120 pesos per 100 pages (A5 Size). I chose A5 and the one which is not less than the size of 3x3 sheets because it fits the pocket of my bag!
  • Planner Groups are your best friends! I bought a handful of craft materials for the price of 250 from a "mine all you can" thread!
MY PAPER CLIPS CLIPS AND CLIPS!

  • I used clips! Multipurpose! I exceptionally reuse this for budgeting, to sort bills and attached it to the receipt! WOAH!
  • I use a refillable gel pens in writing!
  • I am not a fan of too many colors on some days. You can really rely on this when everything is messy, or you are in a hurry! A black gel pen is a staple!
  • Washi Samplers is love! I am so lucky to catch new designs and prints because of buying these samplers! PLUS! They are cheaper! (Especially from a destash thread!)


I bought this for less than  100 pesos last year! Woot woot!

CHEAP FINDS! WHERE TO GO?

  • Shopee is indeed one of the most online popular marketplaces where some planner girls and moms binge scan! You can even cart the lowest price during their Flash Sales!
  • If you are near to any Expressions shops, you can easily pick up great finds! (I bought 70% of my new materials there last year! Lol!)
  • Magazine shops, your neighborhood seamstress, and your artist friends can give you their excess materials or their cut-outs! I love collecting a small bit of some corner laces! 

There can be lots of ways to renew yourself in crafting and creating the best planner that suits your taste. And building it with your own hands without draining you lots of money is better. 

Never be afraid of starting your own planner journey, we can do it!

Stigmata of The Holy Ghost
(My Personal Favorite!)

This first painting above knocks me out. The second I snap a look at it, I saw myself. I saw my child.
 That God can be one of us. He can be any of us. 
Walking down the memory lane, I always see my father teaching us how to write and draw. The feeling always went back every time I visit an art exhibit or a museum. I always love colors, forms and interesting images made by points or dots.

 Last Thursday is one of the most refreshing events I ever attended as a blogger mom who was an artist on stage. Seeing paintings and artworks hanged on every panel amuses me. As I have been surrounded by a bunch of artists that very moment, I realize that every art or painting they put up is a story made of life.

The Birth of  Art de Triomphe


"It was just a dream. And now I met these people who share the same ideas, same vision and courage, we took the chance." That is what Ma'am Bernadette Gular said to me. As she opens her home to be the haven of these artists to share their creations with the public. After more than two decades of living away from the city, she went back and reconnect with some people at Philippine Women's College. Then she met a few people, including Peter Amaya, who was also working in the said school at that time. Then they started creating small steps of bringing back classism to the people of today. As they share the same advocacy and dedicated everything to God. They had their soft opening last October 2019, and just this January 16, 2020, they launched it to the public.


Kristo 2020: Unto Rebirth in Mindanao


As Ma'am Bernadette started making this vision come true, her colleagues Salvador J. Ching already conceptualized Kristo 2020 since 2005. Collaborating with him gives her a spark to make a move. Teaming up with the best artists, including Mr. Rodney Yap, who also tap artists outside the city. The launching was joined by Maru Aihara, Peter Amaya, Shaira Ancheta, Glenn Baga, Bienvenido Bones Bañez Jr., Romilo "Do Dong" Caballero , Johnny Cabañero, Bryan Cabrera, Arvin Cantalejo, Nil Capinianes, Reneboy Chua, John Renzo Daquigan. Tristan Rae Daran, Romeo Dumuk III, Gemarie Gamas, Mean Tan Guinoo, Bernadette Gular, Toym Imao, Noby Juno Jr, Gabrielle Macavinta, Omar Noble, Isang Ondon, Dominador Pamisa Jr. , Imelda Pangan, Lito Pepito, Joaquin Sala, Rob Tanedo, Lawrence Christopher Tulio, Dominic Turno, and Lino Velchez.

The exhibit comprises a line up of paintings and artworks that mesmerize the audience with the image of Jesus Christ and also tells a deep story. Each artwork is not just a mere painting hanged in there for aesthetics. Everything tells a history. A long dramatic description of Jesus into their lives.

“Arts is not just painting, colors, or what. It is a way of living, it is your way of life. “ Romeo, one of Art de Triomphe featured artists. He said he is always passionate about drawing when he is still a child. As he uses pens to create images on any blank papers he sees. He said that his parents, who inspire him, are the key to his success as an artist. And now that he is starting to build his own family, he is hopeful to bond with his future kids with arts.

"If the child shows talent and he shows his style. The support must be not limited to the materials but also the understanding of the passion and give them the freedom to discover what more they can do." Noby Juno Jr, one of the exhibit's featured artists.

"Arts depend from person to person. I have known a few people who discovered their talents, who discovered their skills when they are young, some are when they are in college or adulthood. For me, my exposure and my parents' support is one of the cores of continuing my passion." Gabrielle Macavinta featured industrial artists.


Invitation to the Public and Art Enthusiasts


The event is open to the public for one month. Great news to those people who wish to enjoy the crafts, plus some pieces are for sale! 

You can visit Ma'am Bernadette's home. Located at Tulip Drive, Juna SubdivisionFront of DLPC Substation, Davao City. Just at least 5-10 minutes away from SM City Ecoland, Davao City.

Thoughts to Ponder


Before the night ended, I realized that parents play a very important role in every child's talent. From discovering their potentials, guiding them and supporting them as well. Every child is unique so as every parent. Partnering your child in making them the person they want to be is not an easy task. But, giving them time and showing them that you are always there standing on their side when they lean on is the best thing that we can do.

How I wish to join this wonderful event again. I believe that "arts" is what the world was made. Each pattern, each connection we made through people or through non-living things, is definitely a craft made by God. Kristo 2020 is just one example of how Jesus Christ creates a part in our lives, these artists are only outlets of the great news that He is real, divine and existing.#
